Vinification: Hand picked extremely early on a cool misty morning this Chenin was destemmed and then left on the skins during the first 3 days of fermentation. Pressed and then a very slow ferment in open top Amphorae, stirred 2x daily. A 500 and 350 liter Italian Amphorae were topped up and also a 675 liter Australian Vitrified Clay Egg. Aged for 9 months before being racked and then bottled during descending moons. Nothing added so nothing is taken away.
