Vinification: Hand harvested early in the morning up in San Miguel and brought back to our winery. Both varieties were co-fermented after foot stomp and left on skins for 9 days. Pressed and then aged in (2) 500L and (1) 225L neutral oak barrels. Racked and bottled during descending moons. Ingredients: Grapes
Analysis: pH: 3.86p | TA: 0.621 g/l | RS: 0.18 g/l
Tasting Notes: Dark and broody blackberry fruit with almost a velvety chocolate texture. Round tannin and balanced acid makes this a great foodie wine. Pairs very well with barbequed red meats.
