Vinification: Hand harvested and gently foot stomped. Eight days of skin maceration during fermentation with multiple punchdowns daily. Pressed and then elevage in an Australian Vitrified Clay Egg. Racked twice and then bottled on descending moons. This wine may contain sediment so a gentle decant is suggested. Ingredients: Grapes.

Analysis: pH: 3.46p | TA: 0.72g/l | RS: 0.19g/l

Tasting Notes: Earthy aromas on the nose with lifted notes of raspberry, bramble, baked plum, and cloves. Deep red fruit on the palate, followed by a spicy nutmeg finish. Pairs well with rib roast with savory herbs.
