Vinification: Foot stomped whole cluster in open top fermentation bin and Amphora. Fermented on skins 15 days through primary. Pressed and aged 15 months in a combination of a 300 Liter Amphora and a 500 Liter Neutral Oak Barrel. Racked during descending moon and then bottled the following descending moon. In bottle 2 years before release.
Tasting Notes: Dark ruby red color. Dark plum and cherry, autumn forest berry’s, wonderful minerality with almost a hint of salinity, on the palate deep dark cherry and surprisingly delicious kumquat, licorice root and black raspberry. Rounded tannins and smooth fruit acidity.
