Appellation: Paso Robles, CA

Vineyard: AmByth Estate, Mark’s Vineyard. Dry Farmed.

Cert and Farm: Biodynamic. Organic.

Aging Vessel and time: 350L Italian Terracotta Amphora 12 months on skins, 15 months total

Yeast, Sulfites, Additions: Native, None

Alc: 13.74%

Cases Produced: 31

Vinification: The best clusters were hand picked on a late September morning and then foot stomped in a 350 liter Italian Terracotta Amphora. A small amount of pressed juice was used to top off the vessel and left to age on the skins for 12 months. It was then pressed and racked two times on descending moons within three months and then bottled. Ingredients: Biodynamic Grapes.

Analysis: pH:3.45 | TA:0.82g/l | RS:0.24g/l

Tasting Notes: Its amazing what one year of skin maceration has done to our Sangiovese. This is California Chianti and we would be proud to pour this to a hardcore Tuscan. The time in Italian Terracotta Amphora lent the rustic and earthy notes in the background with the foreground of subtle bright acid that nips the tongue and flavors on the cheek of plum, cherry and ripe tomato. Absolute perfect pairing with our homemade lamb Bolognese and sharp Pecorino Romano. -Gelert
