Vineyard: AmByth Estate, Mark’s Vineyard. Dry Farmed.

Cert and Farm: Biodynamic. Organic.

Aging Vessel and time: Italian Terrecotta Amphora. 24 months

Yeast, Sulfites, Additions: Native, None

Alc: 12.62%

Cases Produced: 36

Vinification: Hand picked and then gently foot stomped early on a late-august morning. Skin maceration for 10 days, pressed and then élevage for 24 months in a 300 liter Italian Terracotta Amphora. Racked and bottled during descending moons with no additions. May contain sediment so shake at your own risk. Ingredients: Grapes.

Analysis: pH: 3.42p | TA: 0.81 g/l | RS: 0.16 g/l

Tasting Notes: Just paired with a simple pasta with white wine sauce topped with grilled asparagus and broccoli, a fresh fennel salad and AmByth lamb sausage. Pretty perfect. -Gelert
